I have had this recipe for over 25 years and don't remember where I got it. My children devour them and ask for them everytime they come visit or when they are having company, they call because they can't find the recipe. We made some and shipped them to Saudi Arabia when my son was stationed there. He even called for the recipe while he was in the Army, any time he was off post and had access to a kitchen. I think you'll like them.
Fast and Easy. - SCOTCH TEAS
Pre-heat oven to 350 for a metal pan and 325 for glass.
Coat pan with non-stick cooking spray.
INGREDIENTS
Single Recipe (8x8 pan)
Double these amounts for a 9X13 pan
1/2 cup margarine
1 cup light brown sugar
1/4 tsp salt
1 tsp baking powder
2 cups quick cook oatmeal
In a large sauce pan, blend margarine and brown sugar over medium heat until the sugar is melted. Remove from heat.
Stir in salt and baking powder until well mixed. Add oats and stir until the oats are evenly coated.
Pour into prepared pan.
Cook on the center rack of the oven until golden brown. (NOTE: Overcooking burns the sugar and makes it harder to remove from the pan --- so watch the edges near the end of the cooking time. You want it firm, but not hard.) Let it cool completely before cutting.
COOKING TIMES
SINGLE RECIPE
8x8 metal and dark teflon pans - 350 degrees for 20-25 minutes
8x8 glass 325 degrees for 15-20 minutes
DOUBLE RECIPE
9x13 metal 350 degrees for 25 minutes
9 1/2 x 13 1/2 glass 325 degress for 20 minutes
